A few of my favourite themes for S60:

1. SiMo QVGA Theme

Straightforward, simple theme with a near-perfect combination of blue and black giving it a professional feel. Contrast between fonts and background colors is great and it is easily readable in sunlight.

2. Frog

Visually stunning theme with Aero-like transparencies. The fluorescent green background is really great, but it makes usage in direct sunlight slightly difficult. Great indoor theme which will look really well on a dark faceplate. Bundled package includes a version with default icons.

3. Carbon & Silver

Simplistic black-and-white style basic theme with a silver abstract background. Great contrast between background and fonts, except for some selection windows where there is a white font on silver background (look at screenshot 2). Small install size, easy on the RAM and readable in direct sunlight. Bundled package includes versions with default and custom icons.
